Spicy Avocado Tuna Salad

Now that it's beginning to get warm out (finally), this has become my new lunch go-to! This recipe is super quick and easy, not to mention tasty. At only 200 calories per serving this makes a perfect lunch or snack on the go. I like to enjoy my tuna salad on a 100 calorie sandwich thin or with pepper jack flavored nut thin crackers. 

Spicy Avocado Tuna Salad

Ingredients:
1 2.7 oz. to-go can chunk white tuna in water, drained
1 container wholly guacamole mini 100 calorie packs
1 tsp Siracha hot sauce
1/8 cup green onions, chopped

Directions:
1. Mix tuna and guacamole together until well combined. 
2. Drizzle with Siracha and top with green onions. Enjoy!

Brunch Chilaquiles


I am a huge fan of brunch food, mostly because it is perfectly acceptable to eat at 2 pm and still resembles breakfast. Chilaquiles are one of my absolute favorite dishes of all time! I was first introduced to the dish working at a Cuban restaurant in Michigan. This is definitely one of my go-To's for an impressive brunch dish that everyone will love! 

Brunch Chilaquiles

Ingredients:
1 tbsp cooking oil (olive, coconut, or vegetable)
4 cups good quality, restaurant style tortilla chips (the thicker and crunchier the better)
4 eggs 
Salt and pepper to taste
1/4 cup green onions, chopped 
1 can enchilada sauce or salsa verde
1 cup reduced fat Mexican style shredded cheese 
1 tbsp fresh cilantro, chopped
1/2 avocado, diced 
Optional: 1/4 cup pickled jalapeños (recipe here: http://www.jocelyndieboltdesigns.blogspot.com/2014/04/soy-pickled-jalapenos.html?m=1)

Directions:
1. Heat oil on medium in oven safe fry pan. Add tortilla chips and cook in oil about 5-10 minutes until very crispy and golden brown, stirring frequently. 
2. In a separate pan, fry eggs to your liking. (For this recipe, I like my eggs sunny side up.) Season with salt and pepper. Set aside. 
3. Add green onions, enchilada sauce, and half the cheese to the tortilla chips and mix lightly. Top with eggs and the rest of the cheese. 
4. Turn on oven broiler. Broil pan in oven 1-3 min on high until cheese melts. (Make sure to watch carefully!)
5. Remove pan from oven and top with cilantro, avocado, and jalapeños of you want more spice. Enjoy!

Coconut Banana Bread Muffins


If you have visited my blog before, you know I'm a sucker for banana bread. Every week I buy a bunch of bananas and let them sit on my counter as I not-so-patiently wait for them to brown enough to make banana bread for the coming week. I also have a slight obsession with coconut, so this recipe is a perfect combination of two things I love! These muffins are delicious enough for dessert and healthy enough for breakfast! Nom nom!

Coconut Banana Bread Muffins

Ingredients:
2 very ripe bananas (optional: +1 for topping)
3 tbsp coconut oil
1 tsp vanilla
1/2 cup brown sugar
1 egg
1 tsp skim milk
2 tsp orange juice
2 tsp Greek yogurt
1/2 cup whole wheat flour
1/2 cup quick oats
1 tsp baking soda
3/4 tsp baking powder 
1 tsp salt
1/2 cup shredded coconut (optional: +2 tsp for topping)

Directions:
1. Preheat oven to 350.
2. In medium mixing bowl, mash bananas until smooth. 
3. Add oil, vanilla, brown sugar, egg, milk, juice, and yogurt. Whisk 2-3 minutes until well combined. 
4. In separate bowl, combine dry ingredients. 
5. Add dry ingredients to wet ingredients and mix until well combined. Let mixture stand 15 minutes. Fold in shredded coconut. 
6. Pour batter in to greased or papered muffin tins. Top with additional shredded coconut or banana slices. 
7. Cook at 350 for 18-22 min or until toothpick comes out clean and bread is golden brown. Enjoy!

Healthy Sweet Potato Skins


Potatoes are my guilty pleasure. Give them to me mashed, fried, baked, or any other way and I will love you forever. However, potatoes are packed with starches and carbohydrates that is not nice to the waistline. Here is a healthier alternative to the awesome bar food that uses sweet potatoes, turkey bacon and Greek yogurt. This recipe is a great way to snack and still stick to your diet. And, BONUS: they still taste amazing!

Healthy Sweet Potato Skins

Ingredients:
Coconut oil spray (or any other non-stick spray)
2 large sweet potatoes (the short, fat ones work the best)
Light cheddar cheese, shredded
Turkey bacon, cooked and crumbled
Plain Greek yogurt
1/4 cup green onions, chopped
1 tsp. parsley, chopped

Directions:
1. Preheat oven to 350. 
2. Spray cookie sheet with oil. 
3. Cut sweet potatoes in to 1/2 inch thick circular slices. Place sweet potatoes evenly across cookie sheet. 
4. Cook for 25-30 min at 350 or until browned and tender, flipping sweet potatoes half way through. 
5. Sprinkle cheese evenly on top of sweet potatoes. Place back in oven 2-3 min or until cheese is melted. 
6. Top with bacon, Greek yogurt, green onions and parsley. Enjoy!

Butternut Squash and Smoked Gouda Mac 'n Cheese


Who doesn't love Mac 'n cheese? It's one of those warm comfort foods that hits the spot every time. Here's my spin on an old classic. By using butternut squash in the sauce, this recipe gives you all the ooey gooey cheesy flavor without all the fattening calories! 

Make it a meal with my Turkey Meatloaf Muffins and some roasted asparagus!






Butternut Squash and Smoked Gouda Mac 'n Cheese

Ingredients:
4 cups butternut squash, cubed
3 cups whole wheat macaroni noodles, dry
1 tbsp Tuscan herb flavored olive oil
1/2 yellow onion, finely chopped
2 cups skim milk
1 tsp black pepper
1/2 tsp garlic powder
1 tsp dried parsley
1 tsp dried oregano
1 tsp salt
4 green onions
3/4 lb cubed + 1/4 lb shredded smoked Gouda cheese, divided
2/3 cup Panko crumbs
1 tbsp Italian seasoning

Directions:
1. Preheat oven to 400. 
2. Coat casserole dish with nonstick spray.
3. Bring two pots of water to a boil. In first pan, boil squash for 5-10 minutes or until softened. In second pan, boil pasta for 5-10 minutes or until tender. 
4. Drain pasta and return to pan, set aside. Drain squash and return to pan. Mash squash with potato masher until smooth, set aside. 
5. Heat oil in saucepan over medium heat. Add yellow onion and sautée until browned, stirring frequently. 
6. Add half the milk and bring to simmer. Whisk in pepper, garlic, parsley, oregano, salt, and green onions. 
7. Gradually add cubed Gouda and remaining cup of milk, melting cheese each time. Continue to cook until mixture thickens, whisking continuously. Add mashed squash and mix until combined. Pour over cooked pasta and stir until evenly coated. Transfer pasta to casserole dish. 
8. Combine Panko crumbs, Italian seasoning, and shredded cheese. Sprinkle Panko mixture evenly over pasta.  
9. Bake at 400 for 10-15 minutes or until bubbling and slightly browned on top. 
10. Let stand 10 minutes before serving. Enjoy!

Helpful Tip: when cooking for one or two, bake half and freeze the rest for next week!

Low-Calorie Avocado Chicken Salad


I am absolutely obsessed with Avocados. Seriously. Ask anyone. I will eat a whole avocado with some salt and pepper as a snack. So of course, I try to find any way to incorporate more avocado in to my diet. This recipe is super quick and easy, not to mention healthy. I like to make it in the morning and then bring it with me to eat at work. 
My favorite way to enjoy this chicken salad is in a sandwich between two pieces of Sara Lee 45 Calorie bread with Sea Salt & Pepper Rice Thins (pictured above). BONUS: That whole meal is only 280 calories!

Low-Calorie Avocado Chicken Salad Recipe

Ingredients:
1 chicken breast, cooked and cooled
1 medium avocado
1/4 cup Greek yogurt
1 tbsp fresh cilantro, chopped
Juice of 1/2 lime
1 tsp garlic powder
Salt and pepper to taste
Bread, pita, crackers, etc. (optional)

Directions:
1. Cut chicken breast in to small cubes. 
2. Slice avocado in half. Scoop out one half and mash until smooth. Slice second half of avocado in to small cubes. 
3. Combine chicken, avocado, yogurt, cilantro, and lime juice in bowl and mix until even. Add garlic powder, salt, and pepper. 
4. Cover and chill at least 30 min before consuming. Enjoy!

(Makes two servings, so save some for dinner or a snack!)
